Crispy Breaded Onion Rings
A massive tweak to the recipe I found online
Tried out this recipe and I must say these rings went so well and are absolutely yums with my fav garlic chilli sauce. Even better, they taste somewhat similar to Tony Roma's onion loaf! But since I couldn't get hold of some ingredients, I've decided to tweak this recipe to my liking. It's my first attempt & look at these delights. 
Golden and delish. 

Serves 8-10
Warning: these rings are heavenly. it's hard to stop at a handful.

Ingredients: 
1 cup all purpose flour
1/2 cup cornstarch
3-4 big yellow onions (cut into rings)
2-3 cups breadcrumbs
1/4 tablespoon of fine salt to taste 
vegetable oil for frying
1 cup cold soda
3/4 tablespoon of black pepper

Sift together the flour and cornstarch. Add the club soda, salt and black pepper and whisk to combine. 
Let the mixture sit in the fridge for 10 minutes. Meanwhile, heat vegetable oil to 350 degrees F. 
Pour the breadcrumbs into a shallow dish. 

Remove batter from the fridge and check for consistency. 
The mixture should resemble a slightly thick pancake batter. More club soda can be added to adjust. 
Working in batches, use a fork to coat the onion rings in the batter, let the excess drip off, 
and then toss in the panko to coat on both sides. 

Fry for about 2-3 minutes, turning over in the oil halfway through, until crispy and golden brown. 
Drain on a rack, and serve warm, sprinkled with salt.
